Mixologists are now using a surprising ingredient: aquafaba, also known as chickpea brine. Whipped aquafaba loses the distinctive smell and taste of chickpeas but takes on a texture similar to whipped egg whites, allowing vegans or those with egg allergies to enjoy once verboten drinks.
