Late Night Favorites: The Drawing Room’s Chef Nick Lacasse Talks Bacon Squared

bacon squared Late Night Favorites: The Drawing Rooms Chef Nick Lacasse Talks Bacon Squared

It's hip to be bacon squared at The Drawing Room.

We’re celebrating the release of the 2011 Diners’ Choice Awards for best late night restaurants by looking at a few of the dishes that diners find extra delish after hours. Executive Chef Nick Lacasse of The Drawing Room in Chicago talks about Bacon Squared, including his explanation for why it’s so popular.

The dish: Bacon Squared, which is bacon wrapped in Duroc pork belly. In its previous incarnation (pictured), it included frisée, pickled fennel, and kumquat gastrique. The most current preparation features peaches, habanero, maple-ginger vinaigrette, and basil.

The inspiration: “The inspiration for this dish was born from the original menu concept meetings of The Drawing Room, pre-opening with Shawn McClain. Back then, the focus was kitschy kind of tongue-in-cheek, small-dish offerings, where fun to eat was a main goal.”

The explanation: “It is an especially good seller during late night service. It’s very cocktail-friendly, having a base flavor of salty and fatty; it’s almost made for bourbon or rye. Its funny to me to imagine how many thousands I’ve rolled up over the years!”

Curious diners take note: Bacon squared is also served during the day.

Reserve a table at The Drawing Room to try this dish.

Late Night Favorites: Chef Adam Lambert on Bar Cento’s Sunnyside Pizza

Bar Cento Sunnyside Pizza Late Night Favorites: Chef Adam Lambert on Bar Centos Sunnyside Pizza

It's easy to see why diners get egg-cited about Bar Cento's Sunnyside Pizza.

We’re celebrating the release of the 2011 Diners’ Choice Awards for best late night restaurants by looking at a few of the dishes that diners find extra delish after hours. Next up, is Chef Adam Lambert’s Sunnyside Pizza at Bar Cento in Cleveland. He tells us about his creation, including an explanation for why it’s so popular.

The dish: Sunnyside Pizza

The inspiration: “Eggs with bacon is one of those classic combinations that everybody loves. So, when the idea of a breakfast pizza came about, it was the only logical way to go. We put our Bar Cento spin on it, substituting pancetta for bacon, and adding lots of black pepper and provolone cheese. We also source all of the eggs for the Sunnyside Pizza from local farms. Since the Sunnyside Pizza was awarded the title of  “Best Pizza in Ohio” by Food Network, we have been using a lot more eggs, and we want thank all of our guests for helping us support our local egg farmers!”

The explanation: “It is the perfect breakfast, lunch, and dinner pizza. Our customers love this pizza and can be heard ordering it by a multitude of different names (egg pizza, breakfast pizza, sunshine pizza, that one with eggs on it pizza, the F$*&^#%^ pizza). Guests that sit at the chef’s table get a close view of the pizza station and always look perplexed at the sight of us cracking eggs onto a pizza. But, the late night crowd sure seems to enjoy it (and our duck fat fried pomme frites).”

Curious diners take note: “The sunnyside pizza is available from open to close, 364 days a year. Feel free to come in and inquire about the one day a year we do not sell it.”

Reserve a table at Bar Cento to try this dish.

Red Medicine's beef tartare is definitely a late-night sight for sore eyes.

We’re celebrating the release of the 2011 Diners’ Choice Awards for best late night restaurants by looking at a few of the dishes that diners find extra delish after hours. First up, is Chef Jordan Kahn’s Beef Tartare at Red Medicine in Beverly Hills. He shares a few tidbits about his creation, including an explanation for why it’s so popular.

The dish: Beef tartare / water lettuce, water chestnut, nuoc leo, chlorophyll

The inspiration: “This dish represents the philosophy of our cuisine: French-Vietnamese influence, local ingredients, and a modern aesthetic.”

The explanation: “Steak tartare can be difficult to find on menus in Los Angeles; it offers a dish that everyone is familiar with, but in a new form and with a new flavor profile.  It’s particularly attractive to chefs and people in the restaurant industry:  high quality beef, peanuts, chili, herbs — what’s not to like?”

Curious diners take note: This particular version is only served at the bar — the bar menu is available every night, from 6pm until 2am.

Reserve a table at Red Medicine to try this dish.
